We offer dishes made with our proud handmade soba noodles, fresh fish sent directly from the farm, and seasonal vegetables. We carefully select and order ginjo sake and authentic shochu from all over Japan, so please enjoy them together. While the private rooms are a space where you can relax, we have an opening at the top to prevent them from becoming a completely closed room.
Homemade flour handmade soba noodles
At Kyoya, a stone-milled soba restaurant
We use soba noodles harvested in Maruoka Town, Fukui Prefecture.
We purchase buckwheat noodles with their shells still on, grind them into homemade flour, and serve them by hand daily using stone-ground buckwheat flour.
Gensoba from Maruoka has smaller buckwheat berries than other types, but it is characterized by the fact that the berries are packed together and have a strong aroma. Furthermore, due to the high level of awareness of the producers, quality control is thorough, resulting in delicious soba noodles.
Soba begins to deteriorate the moment you peel it, so you can slow down the deterioration by grinding only the amount you need using homemade flour.At Kyoya, you can enjoy the original aroma and sweetness of soba.
